John Ishmael

John brings over three decades of experience in the catering and hospitality industry, having worked across a broad range of sectors including retail, leisure, local government, healthcare, workplace dining, education, and large-scale outdoor events such as festivals. His operational insight is built on years of frontline and strategic leadership including senior roles within some of the UK’s most respected contract catering companies.

 

In addition to his consultancy work, John still runs his own successful backstage and location catering company, giving him a continued hands-on understanding of the fast-paced nature of the industry. This blend of practical and managerial experience enables him to offer clients grounded, actionable advice with a sharp commercial edge.

John holds an HND in Hotel, Catering & Institutional Management from Lancaster University, and maintains current senior certifications in Food Safety & Hygiene, Gas Safety, and Health & Safety.

Simon Evans

Simon brings a passion for food and a depth of experience in both creative and operational aspects of the catering industry. With a background in menu design and new product development, he has held senior management roles in both the licensing and contract catering sectors, giving him a strong grasp of what makes food operations commercially successful and operationally efficient.

 

Before joining FIG Consultancy, Simon ran his own Mediterranean deli bar and catering consultancy, working directly with clients to enhance their food offerings and business performance. He also launched the South West Food Cartel – an initiative aimed at promoting local food producers and supporting independent food businesses through collaboration and visibility.

 

Simon holds a BA (Hons) degree in Psychology, bringing a unique understanding of customer behaviour and team dynamics into his consultancy work.
